Sweet Potato and Chilli Cheese Wraps Recipe

This is a super-simple recipe that you can have in reserve for those evenings when you’ve nothing fresh in the fridge, and you can’t be bothered to spend more than 15 minutes on dinner.

The sweet potatoes will store for weeks, and you can have a roll or two of goats cheese and a pack of pre-made flour tortillas in the freezer.

Ingredients (for 2 people)

2-3 sweet potatoes, peeled and cubed

1 roll or log of crumbly goats cheese (I bought one with chilli on the outside, which makes it even easier!)

1 pack of soft flour tortillas or wraps

a few twiglets of fresh rosemary

1 tbsp chopped fresh chives

chilli flakes, if you are using plain cheese

Fresh or frozen spinach, to serve with


- fry the sweet potatoes with the sprigs of rosemary until soft and slightly browning. Remove the rosemary.

- here’s a pic of my little spinach bed. Grab some leaves and heat in a pan until wilted. If your using frozen spinach then heat it up.

- warm 4 tortillas in the microwave for 30 seconds, then on each spoon on some of the sweet potatoes, goats cheese, chilli, and chives. Roll up the tortilla (2 per person), and serve with the spinach.
