Tzatziki Recipe

tzatziki recipeThis is a lovely summer recipe made from cucumbers and yogurt – light, refreshing and moreish. Perfect with some turkish bread or foccacia, as a snack or starter.

The trick to getting this very easy dish right is to remove all the cucumber seeds and drain the grated cucumbers well before mixing.


1 large cucumber, or 2 small ones

1/2 pot (of 10% fat greek yogurt

1 tbsp chopped fresh dill

juice from 1/2 lemon

1 garlic clove, very finely chopped

olive oil, salt, pepper

- First, cut the cucumber(s) lengthways. Take a desert spoon and run it along the centre of each half to get out the seeds. Then peel your cucumber carefully to not waste any flesh, and then grate the flesh coarsely. Sprinkle a little salt over the cucumber, and place in a colander or sieve for about 30 mins to let the liquid drain away.

- Combine the yogurt, dill, lemon juice, salt, pepper, garlic and cucumber. Drizzle over plenty of olive oil, give it another quick stir, and serve.

    Thanks for this recipe – I tried it and it turned out great! For some reason a lot of recipes include mint, but I prefer it without it too.
