Pear, Walnut and Blue Cheese Salad Recipe

pear avocado blue cheese saladThis salad is a lovely balance of strong blue cheese, sweet pear and crunchy walnuts.

The avocado goes really well with the flavours and makes it hearty enough for a full meal, especially if you serve with some chunks of bread or toast.

Ingredients (serves 2 – 4)

2 ripe avocados, de-stoned and peeled, chopped into chunks

2 conference pears, cored and chopped into chunks

50g good quality blue cheese, such as oxford blue or stilton, crumbled

2 tbsp walnuts, roughly chopped

Salad leaves

2 tbsp vinaigrette dressing (to make: 1 tbsp runny honey, 2 tsp grain mustard, 1 tbsp white wine vinegar, 1 tsp balsamic vinegar, 2 tbsp olive oil, 2 tsp water, salt and pepper and a pinch of dried oregano – shake up in a jar (makes more than you’ll need for this recipe but it keeps in the fridge!)

- assemble the lettuce, avocado and pear on the plates

- sprinkle on the cheese and walnuts

- drizzle with dressing and serve
