This is a quick and hearty recipe ideal as the weather gets colder. Make your own homemade gnocchi if you have the time, or buy a few packs of chilled gnocchi from the supermarket!
Ingredients (serves 4)
1 kg potato gnocchi
150ml single cream
250g smoked hard cheese, grated
100g sundried tomatoes in oil large
Bunch of spinach leaves, steamed
15 cherry tomatoes, halved, or 2 large tomatoes, sliced
Handful of breadcrumbs
1) Cook the gnocchi according to instructions and place in an ovenproof dish with the cream, spinach, and sundried tomatoes, fresh tomatoes and half of the cheese.
2) Cover with the remaining cheese then breadcrumbs.
3) Bake in the oven at 180 degrees C for 20 minutes until golden.
For a nice colour contrast on the plate, serve with another green vegetable such as chart or cavalo nero!
