Tomatillo and Tomato Stuffed Portabello Mushroom Recipe

tomatillo-portabello-mushroThis is a nice quick side dish or light lunch. The tomatillos in this recipe give a tasty lemony tang.


6 large portabello mushrooms
Handful tomatillos, chopped
Handful cherry tomatoes, chopped
4 spring onions, chopped
2 balls of mozarella cheese
Olive oil

1) Remove the stalks from the mushrooms and place the mushrooms on an oven tray, stalk-side up. Brush each mushroom with olive oil.

tomatillo-mushroom2) Chop the mushroom stalks and mix with the tomatoes, tomatillos and spring onions. Season with salt and pepper. Divide the filling between the mushrooms.

3) Slice the mozerella and top each mushroom. Bake for 15 – 20 mins at 180 degrees C until the cheese is beginning to brown.
