Ingredients (Serves 4)
500g dried pasta
x 2 400g cans chopped tomatoes
2 tbsp tomato puree
1 onion, sliced
2 cloves garlic, chopped
Mixed vegetables, e.g. 1 x red pepper, 1 x aubergine, 250g mushrooms, chopped
1 tsp mixed dry herbs
100g cheddar or other hard cheese, e.g. manchego, grated
100g other type of cheese, e.g. taleggio, mozerella, smoked cheese – cut into small cubes
1) Cook the pasta until nearly al dente (don’t overcook!)
2) Fry the onion and the garlic in a tbsp of olive oil. Add the chopped vegetables and cook for around 5 minutes. Add the chopped tomatoes and puree, and season with the herbs and salt and pepper. Cook for another 5 minutes or so.
3) Layer the vegetables, pasta and cheese cubes. Top with the grated cheese. Cook for 20 minutes at 180 degrees until browning.
