This is a lovely, mild chutney that goes well with cheese and as an accompaniment to pierogi. You only need 5 or 6 beetroot to make a supply for the year (around 6 jars).
This recipe couldn’t be simpler, and it goes really well with tzatiki, hummus and flat bread for an easy (al-fresco if you’re lucky) lunch. Use this season’s new red or candy beetroots while they are still mild in flavour.
