This is a lovely summer recipe made from cucumbers and yogurt – light, refreshing and moreish. Perfect with some turkish bread or foccacia, as a snack or starter. The trick to getting this very easy dish right is to remove all the cucumber seeds and drain the grated cucumbers well before mixing.
